Blueberry Coconut Smoothie

  • 1-1/2 cup frozen blueberries
  • 1 cup unsweetened coconut milk
  • 2 Tbsp. sweetened or unsweetened coconut
  • 1/2 cup vanilla yogurt
  • 1 Tbsp. lemon curd (optional)

Blended with a few ice cubes
Stop at first sign of creamy foam
690 calories

Morning or afternoon, can be a meal replacement.
